PESTO- PALEO AND VEGAN

INGREDIENTS

  • 1 handful of fresh basil
  • 1/2 bunch flat leaf parsley
  • 1/2 cup extra virgin olive oil
  • 1 cup raw pumpkin seeds
  • 1/2 lemon squeezed
  • 1-3 cloves garlic depending on size
  • 2 tbsp nutritional yeast flakes
  • 1-3 pinches of sea salt to taste

 

INSTRUCTIONS

  • Put the basil, parsley, oil, pumpkin seeds, garlic, nutritional yeast and salt into your food processor or Vitamix.
  • Squeeze in the juice of the lemon.
  • Process until you have a consistency that you like. The longer you process it the smoother and fluffier it will get. I personally like mine chunky.
