PESTO- PALEO AND VEGAN
- 1 handful of fresh basil
- 1/2 bunch flat leaf parsley
- 1/2 cup extra virgin olive oil
- 1 cup raw pumpkin seeds
- 1/2 lemon squeezed
- 1-3 cloves garlic depending on size
- 2 tbsp nutritional yeast flakes
- 1-3 pinches of sea salt to taste
- Put the basil, parsley, oil, pumpkin seeds, garlic, nutritional yeast and salt into your food processor or Vitamix.
- Squeeze in the juice of the lemon.
- Process until you have a consistency that you like. The longer you process it the smoother and fluffier it will get. I personally like mine chunky.
